Noble Rot wine

Botrytised or noble rot wines are a late harvest type where the grapes have been affected by a fungal disease called Botrytis cinerea. It’s a micro-organism that attacks the berries, causing them to become dehydrated and consequently to have a high concentration of sugar. These wines are very sweet and extremely complex. They also usually command a high price, due to the scarcity of fruit (one vine per glass!) and because their care and harvesting require meticulous attention, which lasts for weeks on end. The most famous botrytised wines are the ones made from Sauternes and Barsac in Bordeaux, Tokaji from Hungary, Trockenbeerenauslese (TBA) from Austria and Germany, and the Sélection de Grains Nobles (SGN) of Alsace, but they can be found in many other countries and regions where the climate allows their production, generally when close to rivers.
