Vin Santo
Italian Vin Santo is a dessert wine of ancient tradition, typical of Tuscany, but it can be found throughout almost the whole of central Italy and also in some more southerly regions. It’s a type of Passito wine, made from dehydrated grapes, mainly using white varieties, such as Trebbiano and Malvasía, although not only those: the Vin Santo produced from red grapes, like Sangiovese, has been given the nickname Occhio di Pernice ('partridge eye'), due to its dark colour. They’re very sweet and very complex wines, matured on lees for between five and ten years in small barrels (caratelli), so tempting with their aromas of hazelnuts, walnuts, apricots, honey, flowers and spices.
