Pedro Ximénez sweet sherry
Pedro Ximénez wines, also frequently known as PX, are very sweet dessert wines which are renowned for their intense flavour and deep colour. They belong to the traditional Andalucian Sherry wines and are made from grapes left out in the sun to dry out in a process called asoleo. This enables the grapes not only to dehydrate and the sugars in the fruit to become concentrated but also to preserve the variety’s natural acidity. It’s a sweet wine, ideal to serve with desserts like ice cream, fruit and chocolate, but its versatility in savoury cuisine means it has a place in meat and fish dishes too, adding a sweet and fragrant touch to vinaigrettes and marinades, and as a fundamental component of the typical Pedro Ximénez reduction sauce.
