The wine
Crushing, spontaneous fermentation and internal cluster maceration for 7 months in underground terracotta amphorae. Aging in the same containers for 7 months. Zurab Topuridze's Mtsvane is a dense macerated white, compact and material. Tight and inscrutable, know how to give it the right time to get used to oxygen and it will soften slowly, in a burst of ever-changing perfumes. A greedy juice, with biting tannins, but well integrated. When the wild meets elegance.
