The idea of the white 2021 Blanco is to make a fresh wine, initially for their own restaurant, and they used a blend with the "new" grape varieties, 50% Viura, 35% Tempranillo Blanco and 15% Maturana Blanca. It's released a few months after the harvest to allow it to become more complex through contact with the lees. It's balsamic, a little medicinal, fresh and light, with a bitter twist in the finish. It has 13% alcohol and good freshness. 132,000 bottles produced. It was bottled in February 2022.
