The wine

San Roman figures among the great wines of Toro. What else could we expect from a great winemaker like Mariano García! It proves and confirms that today's Toro wines bear no similarity to those strong, rough, harsh wines of times past. This is elegant, fragrant and sophisticated. A classy wine, one of those we so often describe as feminine.

What does this wine taste like?

Its cherry colour with a purple rim, fairly dense, will tinge the glass and begin to captivate us with its aromas, slowly unfurling, just like a peacock unfurling its majestic plumage under the gaze of admiring onlookers. Aromas of raspberries, wild strawberries, always lush ripe fruit, violet petals, hints of liquorice, a very pleasant menthol touch and wafts of dry earth... It is a wine with a marked mineral character.

On the palate it is extremely fruit-forward, with dark fruit, and it has impressive structure, with sweet and very ripe tannins. Its passage through the mouth is silky, with a more notable presence of ageing notes on the palate than the nose, always very well-integrated. It is long, exceedingly long, with great balance. Once again: this is a classy wine, powerful and with a long life ahead of it.

Drinking and storing

Decant it at least half an hour beforehand, then relax and enjoy it. If possible, put a couple of bottles by to have in a few years’ time, and your patience will be amply rewarded.

This time I also tasted two vintages of their flagship and eponymous wine, starting with the 2019 San Román, from a warm and dry vintage that resulted in an early harvest that started the 6th of September in San Román de Hornija. It comes from a selection of over 40-year-old ungrafted and head-pruned vines on stony soils with clay and limestone in different villages of the appellation. It fermented in stainless steel with indigenous yeasts and matured in new and used 225- and 500-liter French and American oak barrels for 24 months. The wine feels quite marked by the élevage in oak, and the 14.5% alcohol seems to have extracted quite a lot of aromas and tannins from the barrels. It's warm and heady, ripe and voluptuous, with abundant but fine tannins and mellow acidity. 112,000 bottles produced. It was bottled in February 2020.
