The wine
Safrà (which means saffron) is a red wine from Celler del Roure, a family winery praised by both renowned wine critics and the general wine-loving public. Safrà forms part of the winery's "vinos antiguos" (traditional wines) collection which aims to recover the forgotten winemaking heritage of Mediterranean landscapes. It is made exclusively from local varieties from south-east Spain such as Mandó and Arcos, an almost-lost variety which adds a degree of freshness and complexity to the blend.
What does this wine taste like?
An amazing wine, full of nuances. In comparison with the other two reds in the collection, Safrà is more floral than the Vermell, without attaining the sobriety and complexity (nor the price) of the Parotet. Safra is a spectacularly floral and aromatically complex wine, offering depth and flavour with an unexpectedly restrained palate. All in all, a fresh and subtle yet very elegant wine with fine tannins.

Drinking and storing
Food pairing
Due to its soft tannins, it doesn’t need any food accompaniment. However, the wine shares the fantastic culinary potential of its highly-prized namesake, as well as saffron’s great affinity with rice, in any of its forms. Paella and rice dishes with fish or seafood pair up with Safrà to perfection.

Customer reviews
Winemaking
The wine is fermented in stainless steel tanks and old stone deposits using local yeasts and 30% of whole bunches, with gentle macerations at low temperatures. The finished wine is left to age for 6 months in old 2,800-litre clay vessels in the winery's underground cellar.
