The wine
Grégory Pérez produces this monovarietal from dispersed strains of Godello located between the strains of Mencía and other varieties present in the vineyards of Espanillo. The average age of the strains is 60 years. Due to the different areas of vineyards, the soils are very varied. The low ground soils are mainly clay. In the highlands, slate floors predominate. Cultivated by animal traction and following the ecological premises, harvested manually.
The wine ferments in semi-new French oak barrels of 500 liters. After 48 months in the barrel, the wine is bottled with a slight clarification and filtering. Subsequently, it rests 1 year in bottle until its commercialization.
