The wine
"Io" is made mainly from grapes of the black Grenache variety, picked and selected by hand at the optimum moment of maturity. A somewhat shorter maceration results in a slightly less complex wine than his brother Gneis cellar. Even so, elegant, fresh and tasty.
Io means 'violet' in Greek. And alludes to the violet tonalities that this wine adopts due to a shorter maceration compared to the maceration time of the Gneiss.
