The wine
The harvest is strictly manual and normally takes place during the first ten days of September. The grapes are softly pressed and the must fermented at low temperature to obtain more elegant aromas. The batonnage operation is carried out for about 6 months, i.e. the suspension of the fine lees to obtain a wine richer in olfactory and gustatory nuances. A further refinement in bottle for 3 months is carried out before the product is put on the market. Excellent with cold fish appetizers, risotto alla pescatora. The combination with the Ferrara-style pie is intriguing.
