Maixei Rossese di Dolceacqua

Medium ruby red color with slight purple reflections. It has a vinous and fragrant scent when young, which with aging becomes broad, ethereal, with delicate hints of cooked cherries and slightly dried rose. In the mouth it is balanced, slightly astringent with a very slight tannic vein. It ends with a pleasant and typical bitter background. Suitable to accompany white meats, especially rabbit, medium-aged cheeses and, with the foresight to lower the serving temperature slightly, also elaborate fish dishes such as stockfish and octopus stews.
