The wine
Lacima is made from Mencia grapes grown in three vineyards: one that is over 50 years old, planted at an altitude of 400 metres on schist and slate soils with good drainage; another with vines aged 60-90 years old, planted at between 300 and 450 ms above sea level on slaty soil; and a 50-80 year-old vineyard lying at over 500 ms.
NOTE: Decanting is recommended. Due to bottling without filtration, some solid residue can occur.
Malolactic fermentation takes place in barrel. Aged on its lees for 20 months in French oak barrels, and subsequently in bottle for a further 18 months.
Drinking and storing
Serve between 16ºC and 18ºC
