The wine
The grapes are de-stemmed and pressed. The fermentation is spontaneous and the vinification is traditional in red, with the stalks, in a fiberglass tank, with a maceration of 15 days with the skins after which following the racking the wine goes against the malolactic fermentation. Maturation in fiberglass tanks lasts at least 12 months. Once bottled, without clarification or filtration, the wine rests in the bottle for at least 8 months.
