The wine

Vineyard very close to Beaune, north of the city, a small area around the small village of Chorey and almost at the foot of the Cortons. History and tradition: the Chorey-les-Beaune vineyard was founded in 1237 by Édouard de Froment, a nephew by marriage of the Duke of Burgundy. Viticulture: Organic cultivation since 1990 then biodynamic a few years later. A very pleasant wine. A crisp, brilliant red. The aromas are surprisingly fruity and intense. In the mouth, it is tenderness, suppleness, fluidity, roundness. The finish on the palate is very fragrant and continues to evoke blackberry jam. When the wine is not very old, it is wild blackberry which dominates the nose, but quickly, around 3 to 5 years old, a particular aroma of truffle and undergrowth appears, evolving towards almost gamey notes. The Côte de Beaune, in particular the Clos des Mouches, presents very nice wines with a good concentration. Serving temperature 16 ° C. Consumption: 5 to 6 years.
