The wine
Pressing with the feet in wooden presses, maceration on the skins for 6 months and spontaneous fermentation in amphora. Racking and aging in the same containers for another 3 months. Iago Bitarishvili's Chardakhi is a fresh macerated white wine, lively and energetic. Of fruit, egg, mint and hydrocarbons, a wine of great character, fine and long, reveals a finish of purity and a pleasant oxidative vein.
Drinking and storing
Serve between 8ºC and 10ºC
