The wine
A sweet wine made from the Muscatel variety. The grapes are laid out on the sand to dehydrate, thus concentrating the sugars. This traditional system, called pasil, turns the berries to raisins and makes the subsequent processes quite difficult, but the result is very worthwhile. Delicious with blue cheese or foie gras.
