The 2018 bottling of the NV Fino Una Palma is selected from the three Tío Pepe casks that were six years under flor. It has a classical and serious profile, with a dry palate and a strong sensation of biological aging, notes of esparto grass and wet chalk and a long-lasting, dry and salty finish. It was bottled unfined and unfiltered, en rama, in October 2018. 2,000 bottles produced.

The NV Fino Una Palma, bottled the 14th of October 2016 as seen on the back label, is a selection of three barrels (botas) from the fourth criadera of the Solera Amontillado Fino, a Fino with some six years of age matured in bota under a veil of flor. This is reminiscent of the Tío Pepe en Rama, with a little more edge and oxidative notes with plenty of yeasty aromas and a dry, saline and chalky palate. 3,000 500-milliliter bottles produced.

Very unusual nose with a marked biscuity sweetness. Like lemon and ginger biscuits and a touch of tea leaf. Fascinating aroma. On the palate all those flavours too. Gorgeously flavourful with a sweet/sour finish.
