The wine

Fagus is the top wine of the famous Coto de Hayas winery (Aragonese Wineries), an authentic reference in Aragonese wine from its properties in Fuendejalón, Zaragoza. It is made exclusively from a rigorous selection of Garnacha grapes of different payments, from the last three vintages.

The vineyards, between 40 and 50 years old, produce just one kilogram per strain, so the quality of the fruit is truly excellent. The perfect maturity point is harvested, usually around the first week of October. Its must ferments at a controlled temperature and in the presence of the skins for about two weeks, and then, after it has been converted into wine, perform malolactic fermentation in French oak barrels. Then, the transfer is carried out and covered in new French oak barrels in contact with their own lees. Once this process is finished, the best barrels are selected and their coupage is made, to finally proceed to bottling.

When we look at it in our glasses, it is easy to understand the magnitude of its charm. It shows an intense cherry red color with ruby tones and shines as if it were a true gemstone. In its elegant and intense nose the red fruit (plums and cherries) are mixed with the tones derived from the barrel, such as spices and coffee. After a few minutes in the glass, mineral and pastry souvenirs appear that round the aromatic profile of the wine and make it even more pleasant. In the mouth it is a fatty and voluminous wine, with a step of great balance and concentration. Its fine acidity drives it with agility through the palate while its round tannins cover the cheeks of a silky touch. Its end is long and stately and it is easy to find in it some suggestive memory of roasted meringue.
