The wine
Díaz Bayo 15 Meses is a juicy and spicy wine with a clear hint of wood which combines wonderfully with its perfectly ripe fruit. Undoubtedly, a wine to seduce all palates and a sure-fire winner.
What does this wine taste like?
Its surprisingly intense Picota cherry red colour is a clear indication of the quality of grapes from the 2019 harvest. Looking at its firm body in the glass and dense legs provides a foretaste of the suggestive mouthfeel we are about to enjoy. Aromas of ripe fruits of the forest blend in with spicy and herbal notes in the nose alongside hints of cocoa and liquorice. It is a fleshy drink in the mouth with a great structure and pleasant sensations. Toasted flavours from the barrel also appear in perfect equilibrium with a wild acidity which is masterfully refreshing and adds an extra touch of elegance. These sensations linger on for minutes after every sip in a wine which shows much more complexity than we would expect for this price.

Drinking and storing
Best served around 16ºC, or even at 14 degrees to bring out its freshness. Decanting is not necessary but it is best to use a wide enough glass to allow the wine to clearly express itself. Can be enjoyed immediately or kept for up to 6 or 7 years after the harvest date.
Food pairing
Pairs splendidly with red meat and cheese, especially medium or strong mature cheeses.

Winemaking
100% Tinta del País (Tempranillo), harvested by hand. Destemmed and fermented at controlled temperatures in a combination of wooden, stainless steel and cement tanks. Aged for 15 months in American and French oak barrels and left to stand for a further year in the bottle.
