The wine
After a rigorous selection, the grapes for the Clémentin are conveyed by means of gravity to the tanks where they undergo cold maceration before fermentation. The wine is subsequently transferred to oak barrels in which malolactic fermentation will take place and it will mature for 16 months.
It's an attractive cherry colour and has a smoky nose, replete with ripe fruit reminiscent of blackberries and blueberries. It proves elegant and refined on the palate, of medium tannic structure, without any harshness, exhibiting all the complexity the AOC is capable of. It will continue to evolve in bottle.
