The wine
The grapes come from the Pressano vineyards which consistently give the best results. The altitude is about 300 meters above sea level, with a west and south-west exposure. The soils are of medium texture with good depth and fertility. The average age of the vineyard is about 25 years. The must does not undergo any addition and is decanted for 12 hours before being fermented. It ferments in large oak barrels and in barriques where it rests for about ten months; the different varieties are carefully assembled after this period and bottling usually takes place 18 months after the harvest.
