Having twenty-three generations of winemakers and almost seven hundred years of aristocratic family traditions behind you are not an everyday occurrence. A family of bishops and captains, but also of wine growers, the Bindi Sergardi have been operating in Tuscany since 1349. At the helm, today, Nicolò and his daughter, Alessandra, are among the most active and interesting personalities in the Tuscan oenological world. The family currently works on three excellent estates: Mocenni, a classic foul clay and alberese stone soil in the council of Castelnuovo Berardenga, the heart of the austere, mineral, complex Chianti Classico; Marcianella, further south, which produces wines that are more ready, softer and more fruity; I Colli, towards Monteriggioni, where around a 15th century villa, on calcareous soils dominated by the Giallo di Siena, the Bindi Sergardi produce fresh, agile and fragrant wines.
Nicolò, dedicated to Nicolò Casini, is one of the sons of this beautiful area. It is a splendid homage to the ancient technique of the management style to the Tuscan use. A careful selection of Sangiovese grapes is dried while other Sangiovese grapes, but fresh, are destemmed and placed in stainless steel tanks. Fermentation takes place at a controlled temperature to enhance the aromatic expression and preserve the fruity and floral notes. Once the drying process is complete, the first grapes are put into the vat where the fresh grapes have already completed fermentation, thus starting a second fermentation thanks to their sugar component.
The aim of the Tuscan-style management was and still is to produce wines based on Sangiovese but ready to drink and pleasantly and freshly aromatic. Therefore, not austere and structured wines, but reds which, perhaps slightly chilled, are unbeatable also as a summer aperitif.
An intense ruby red colour, Nicolò expresses an elegant bouquet with intense aromas of ripe fruit and floral hints. Thanks to the "management" this wine is pleasantly well-rounded, pleasantly structured, soft and harmonious, fresh and intriguing. An amazing return to a great tradition. Excellent paired with white and red meat, cheese and Mediterranean first courses.
