The wine

The new wine produced in Quintanilla de Onésimo by Javier Ausàs — former oenologist at Vega Sicilia and advisor for many other renowned wineries. Twenty-five years work in prestigious international wineries, together with his intimate knowledge of the different areas of the Ribera del Duero, have come together in this new project of his which finds Javier working alongside friends and trusted winegrowers.

Javier Ausàs believes that the winegrowers cultivating each plot have a key role to play in making a top wine, and the relationship winemaker-terroir is an essential feature of the Ausàs Interpretación wine. Each vineyard has its own style, and Javier ensures they complement each other perfectly. The spectrum of possibilities these combinations offer gives the wine its floral character of light soils, fruitiness from clay, freshness from the high altitudes, and the strength of chalky soils.

The perfumed and elegant 2019 Interpretación is powerful and ripe at 15% alcohol, reflecting the warm and dry vintage. It fermented with indigenous yeasts and matured for 15 months in barrels, half of them 500-liter ones and 30% of them new. It's a serious and structured red with a classical profile and terrific balance, very fine tannins and a silky mouthfeel through very fine chalky tannins. It's tasty, balanced and long, with stuffing and balance between the components to develop nicely in bottle. This shows the warm year and the hand of a very god winemaker; it is creamy and has good integrated of the oak. 34,563 bottles, 495 magnums and some larger formats produced. It was bottled in June 2021.
