The wine
The Palomino grapes grow in the white chalky Albariza soils that confer outstanding elegance on Jerez wines. Only the free-run must from the best clusters is used in the production of this Amontillado. Fermentation occurs through native yeasts and, once this has finished, the wine fortifies until reaching 15 degrees when it begins its lengthy repose of 30 years in American oak barrels. This gem, historically reserved for the family, is now within the reach of the more fortunate consumers.
