The wine
Generous wine with a first phase of biological aging under a flower veil and a second phase of traditional aging. Average age of 15 years. Of their total aging, eight years are spent under a veil, two years with flower remains and five years of traditional aging. Wonderful evolution of a Chamomile, which over the years is increasing its alcoholic strength and losing the flower naturally, until it becomes Amontillado. It is bottled on the branch, without stabilizing, only with a slight filtering, to maintain the same qualities as in the boot.
