Spergola
Vine present in Emilia since the fifteenth century, it has recently been recovered and distinguished from the sauvignon blanc with which it was often confused. This has allowed it to be protected in the Emilia IGT and the Colli di Canossa e di Scandiano DOC. From spergola we obtain a pale straw-yellow wine, delicately floral, with fragrant hints of apple and excellent acidity on the palate. These characteristics make it suitable both as a still white as an aperitif and as a spumante, even traditional method, of greater facet and complexity.
