Nerello Cappuccio
In Etna since time immemorial, nerello cappuccio is considered the second most important red grape variety in the territory after nerello mascalese. Unlike nerello mascalese, nerello cappuccio is loaded with anthocyanins and polyphenols, therefore it has colour and extraction, but is less suitable for long ageing. Vinified as a single variety, it therefore expresses more ready glasses, floral, fruity, obviously mineral, of good structure and persistence appreciable already when young. Much more often, however, it is vinified with a portion of nerello mascalese, to give it a more immediate approach to classic red Etnas.
