Brachetto
Light red grapes, brachetto is one of the great successful dares of Piedmont. Typical of the southern part of the region, it gives particularly convincing results in the area of Acqui Terme, where the Brachetto d'Acqui DOCG is located. Brachetto produces fragrant, aromatic, vinous and fruity reds with marked notes of strawberry and cherry. The structure is delicate, pleasant, fresh, with low pseudo-heat and slightly accentuated tannins. It is traditionally vinified sweet and sparkling, using the charmat method, stopping the fermentation of the must in autoclave form to preserve residual sugar and low alcohol. It is also sensational in the spumante version, with more pronounced bubbles, and also gives good results in the passito version, acquiring greater concentration and greater taste-olfactory complexity.
