Bombino Nero
With its reddish grapes, more than for the reds, it expresses itself excellently vinified in rosé, so much so that the only DOCG exclusively dedicated to this type in Italy is produced with a base of black bombino nero. The area is Castel del Monte, Puglia, in the interior of Bari, at the foot of the mysterious fort of Frederick II of Swabia. The bombino nero, here since time immemorial, produces a typically southern and Mediterranean rosé: deep pink, the bouquet is intensely fruity, with notes of fresh cherry and strawberry, but also good minerality, thanks to the white rock soil. The taste is opulent, rich and concentrated, certainly fresh, but also velvety and persistent.
