The wine
Les Grandes Crayères is a parcel Champagne made from old vines of a unique and complex terroir of Coteaux Sud d'Epernay with shallow soils and where the chalk peeks out from the surface. The must ferments in French oak barrels where it also ages for 6 months. After 3 years of aging in rhyme, it will be slaughtered.
