The wine
III Lustros is an exemplary sparkling wine due to its character and its long trajectory spanning more than 50 years, a wine which has succeeded in deserving the admiration of the most demanding palates. It’s the faithful reflection of a work of artisans developed over time, capable of transferring all the past history of a delightful vineyard into glasses of exceptional wine.
What does this wine taste like?
Revealing an intense nose, with notes of maturity but also freshness, it enchants with its aromatic richness, of baked apple, sweet pears, ripe citrus fruits, grapefruit peel, crushed flowers and herby Mediterranean undertones reminiscent of fennel and rosemary. Its ageing notes evoke a host of further suggestions: hazelnuts, pastries, toasted bread, brioche, toffee... On the palate it offers a powerful entry and huge structure. Its mousse is fine and creamy, and yet again the evident notes of ageing, along with the crystallised fruit and balsamic hints, reaffirm its high quality, complexity and balance. Lively, refreshing and very long, it can accompany a whole range of foodstuffs and cuisines, from aperitifs to elaborate dishes.

Winemaking
Harvesting by hand, selecting on the table, entry by gravity, and pressing whole bunches. After the first fermentation in tank, this sparkling wine undergoes an ageing period of more than 84 months, during which it remains with a cork stopper in place, enabling very long ageing times. In its final stage, desks are used for carrying out riddling or ‘remuage’ manually, as will happen later with disgorging. As a fine Brut Nature, it’s bottled without any addition of sugar.

Font de Jui
Produced from a coupage of Xarel·lo and Macabeo sourced from the Font de Jui estate, a plot that has clay soils with a sandy substratum which borders on the River Anoia, protected from the afternoon sun by the shade of a pine-decked hill. No chemicals are used, neither herbicides nor pesticides, ground cover is allowed to grow there, and biodynamic practices are employed, all with the clear objective of increasing levels of biodiversity.
