The wine

Enoteca Gramona Brut Nature is one of Gramona's most closely guarded gems, a Gran Reserva which, with its 12 years of maturation, takes ageing to lengths hitherto unknown. It is made from a coupage of Xarel·lo (75%) and Macabeo (25%) grown on the La Plana estate, a parcel of clayey soil with a sandy substratum which gives rise to Gramona's best Cavas.

On the nose, the Enoteca Brut Nature appears subtle and its 12 years of ageing call for it to have a little time to open up; when it does so, it offers aromas of yellow fruit, crystallised fruit, plums, apples, pears, perfumed wafts (patchouli, incense), balsamic notes (eucalyptus, rosemary, bay, fennel), pastry notes, dried fruits and nuts, toffee, cocoa, coffee and the odd earthy and saline touch... The array of aromas seems endless. Entry on the palate is fresh, with a very fine, creamy and persistent mousse. Its finish is fresh, metallic and shows pleasant acidity. Its exquisite character makes it an ideal accompaniment to the finest delicacies, yet it works extremely well with all manner of foods and dishes.
